The Egg roll is the most popular street food of Kolkata, it is also known as “Kolkata Egg Kathi Roll”.This is a tasty and filling wrap sold in the street side food stall that’s loaded with veggies onion, green chilli, cucumber and sauces. Basically, this is a roti (flatbread) that is flattened on an egg omellete which is later stuffed with raw, seasoned vegetables, served after rolling it like a wrapper or Frankie.
It should be served hot, so the assembly process, once the paratha has been fried, needs to be quick and efficient, the outer shell the paratha itself must be flaky yet soft, It should not too chewy that is to say, you should not have to tug at it with your teeth. Most importantly the paratha should be fully cooked and crisp.
The filling should be evenly distributed so you get a little of everything which each bite, finally the mark of an excellently wrapped roll is that you can eat it using just one hand.
Simply bite into your roll and when you reach the paper, gently grip the roll with your teeth to slide it out as you go along, no overflowing filling no leaking sauces everything is contained within a neat package that you can enjoy on the go.
I belong from Kolkata and I loved to eat fast food, and this egg roll is one of my favourite fast food. So here I share this recipe with your friends, hope you will like it.
- Maida -100g (for serving 2 roll)
- Egg- 2
- Onion-1 (chopped)
- Cucumber-1 (chopped)
- Capsicum-1 (chopped)
- lemon juice- 1/2 tsp
- Chat masala powder- 1/2 tsp
- Tomato ketchup 2 tbsp
- Oil – 1
- Green chillies-2 chopped
- Chilli sauce- 1 tsp
- Salt to taste
- Sugar 14g
- Warm water 180-200g
For the outer paratha/wrap, add the flour, salt, sugar to a mixing bowl. Take your time and rub the flour between your fingers until it resembles breadcrumbs in texture.
Now add the warm water and knead the dough for about 5 minutes until it is soft and smooth, coat it with oil, cover the bowl and allow it to rest for 15 mins.
After 15 mins knead the dough once more, divide the dough into equal portions, roll it inside your palm.
Take one dough ball, apply few drops of oil on it, roll it into a chapati/roti shape keep it aside on a plate, repeat the process to roll the other dough ball.
Crack the egg in a bowl add 1/4 tsp salt whisk it properly.
Turn on the flame and heat a frying pan or tawa add a little oil and let it heat properly put the rolled Maida roti in the pan, cook it for a min on low flame.
Flip it to cook another side, cook it for another minute on low flame flip it again, cook it properly from both the sides keep flipping in between.
Once it is cooked properly, take it out in a plate add oil in the same pan and let it heat add an egg in the pan, cook it for few seconds on low flame.
Place the cooked roti on the top of egg let it cook for 10-12 seconds, flip it and cook it for another 6-8 seconds
Step 10 Take it out in a plate and repeat the process to cook the egg coated roti/chapati.
Take one egg coated chapati, add chopped cucumber, onion, capsicum and green chilli in the middle of the roll.
Sprinkle little chat masala, sprinkle a little salt and add lemon juice, add tomato ketchup, add little chilli sauce.
Now roll it and wrap the bottom of the roll with butter paper or foil paper, and now “Egg Roll” is ready to serve.
