It has a nice tangy taste of tomatoes coupled with the flavours and taste of the spices that are used. The egg curry is a cook in many different ways, here I have put a boiled potato in masala which makes the egg curry too yummy. This Indian Masala Egg Curry recipe goes well with tawa roti and paratha you can also eat it with any rice dish.
In my house when I cook egg curry we prefer it with rice and salad, especially my husband love to eat it with rice and this recipe I have learned by my lovable husband, and I share this delicious dish recipe with you step by step. You have tasted this Egg curry at any of the Punjabi dhabas where it’s popularly served with lovely flaky parathas.
Don’t worry this recipe is really simple to make and it all taste just a great. This egg curry is beaming with flavour but it’s not too spicy, so it’s great for kids too.
- Egg-4 (boiled, shelled, cut in halves)
- Potato-2 (boiled)
- Onion- 2 medium sizes (chopped)
- Tomato-3/4 cup ripe, (chopped)
- Green chillies-2
- Ginger-garlic paste-1 tbsp
- Coriander powder-1 tsp
- Cumin powder-1 tsp
- Red chilli powder-1/2 tsp
- Turmeric powder-1 tsp
- Garam-masala powder-1 tsp
- Salt to taste
- Coriander leaves finely chopped for garnishing
- Bay leaf-2
- Mustard oil- 1 tbsp
- Cumin seed-1 tsp
HOW TO MAKE THIS RECIPE
Take a boiled egg in a bowl and cut it in halves, add 1 pinch of turmeric powder, red chilli powder and mix the spices thoroughly.
Heat a oil in a pan add an egg on it and shallow fry it, until the egg gets golden brown in colour then take out aside in a plate.
Again heat a 1 tbsp of oil in a pan or kadhai add bay leaf, cumin seed, green chilli, onion, ginger-garlic paste and saute them till golden brown.
Now add tomato and fry it till the oil get separates from tomatoes, then add boiled potato and fry it 3-4 minutes.
Now add turmeric powder, red chilli powder, coriander powder, cumin powder and salt and fry it for 6-7 minutes.
Add a fried egg in a masala and mix it well, and cook it for 3-4 minutes.
After a few minutes add 1 glass of water on it, and add garam-masala powder and cook it for 7-8 minutes.
Now switch off the gas flame, take it out in a bowl and garnish with coriander leaves, the Egg Curry is ready to serve.
