- Chickpeas ( Chole/ Kabuli Chana) -250gm (soak it in normal water for overnight)
- Chopped onion-4 (medium)
- Chopped tomato-2 (large)
- Chopped ginger-2 inch
- Garlic cloves (peeled) – 10-12
- Whole garam masala ( bay leaves, black cardamom, green cardamom, cinnamon, mace (javitri)
- Turmeric powder- 1/2 tsp
- Cumin seed- 1/2 tsp
- Red chilli powder- 1/2 tsp
- Cumin powder- 1/2 tsp
- Coriander powder -1/2 tsp
- Garam masala powder- 1/2 tsp
- Salt to taste
- Chole masala – 1.5 tsp
- Cooking oil – 5 tbsp
- Coriander leaves – 1/3 tsp for garnishing
How to make Chole Chana masala recipe
Chickpeas soaked it in normal water overnight, put the onion, ginger, garlic in grinder jar close the lid and grind it into a smooth paste.
Add little water if needed and grind it again and when the paste is ready to take it out from the jar.
Now put the tomato in the same grinder jar and grind it into the paste (do not add water) garlic, ginger, onion, tomato paste are ready.
Turn on the flame, heat a pressure cooker pan add oil and let it heat properly.
Once the oil is heated add all the whole garam masala add cumin seed fry it for few seconds on medium flame.
Reduce the flame to low add turmeric powder, red chilli powder mix it and cook it for few seconds on low flame.
Add ginger, garlic and onion paste mix it covers the lid (without whistle) and cooks it for 1 minute on medium flame.
After 1 minute open the lid and stir it then add cumin powder, coriander, powder, chole masala mix it well.
Add tomato paste mix it properly covers the lid (without whistle) and cooks it for 1 minute on medium flame.
Open the lid and stir it and add soaked chickpeas mix it, again cover the pan (without whistle) and cook it for a minute on low flame.
Open the lid and stir it to add 1.5 glass of water stir it, add salt to taste, add garam masala powder and mix it.
Close the lid of pressure cooker properly with whistle keep the flame on low medium.
Cook, it for 5 whistles on the low medium flame after 5 whistles turn off the flame.
Once the pressure cooker cools down to open it carefully and stir it, then add coriander leaves and stir it.
Now Chole Chana masala is ready to serve to take it out in a serving bowl and garnish it with coriander leaves and a slice of onion and ginger and serve a hot.
