How to make Baingan ka Bharta

Firstly rinse baingan with water and pat dry, keep the stem as with the help of the stem you can turn the brinjal

Then give a cross slit from the bottom and check for worms, now you can roast the brinjal in open flame

Keep the flame to medium or medium-low, take care while turning the brinjal, hold the stem and turn

Turn the brinjal after every 2 to 3 minutes on the flame, so that its evenly cooked

When brinjal is cooked then turn off the flame, and then peel the skin and mashed it well

Heat oil in a pan on medium flame add chopped onion, green chilli, and garlic and saute it 3-4 minutes

Then add mashed brinjal and chopped tomatoes or roasted – mashed tomatoes saute it well, then add chilli powder, black pepper powder, salt, coriander leaves and cook it till 4-5 minutes

After 4-5 minutes switch off the gas flame, and take it in a plate and garnish with coriander leaves and serve a hot

Ingredients

  • 2 Brinjal (medium size)
  • 2 Onion (medium size) finely chopped
  • 1 cup tomatoes finely chopped or with 2 roasted, mashed tomatoes
  • 6 Garlic cloves, finely chopped
  • 1 Green chilli chopped
  • 1/4 tbsp Red chilli powder
  • 1/2 tbsp Black-pepper powder
  • 1.5 tbsp Oil
  • 1 tbsp Coriander leaves
  • Salt as required
